Introduction
Qinghai, located in China's northwest interior on the northeastern edge of the Qinghai-Tibet Plateau — the roof of the world — takes its name from Qinghai Lake, the largest inland saltwater lake in China. This vast land of 720,000 square kilometers, with an average elevation exceeding 3,000 meters, is the source of the Yangtze, Yellow, and Lancang (Mekong) Rivers, earning it the titles "Source of Three Rivers" and "China's Water Tower." Qinghai Lake is the soul of the province — a massive blue mirror set between golden grasslands and snow-capped mountains, ringed by rapeseed flowers in summer and frozen like a mirror in winter, beautiful in every season. Chaka Salt Lake, known as the "Mirror of the Sky," perfectly reflects the blue sky, white clouds, and human silhouettes on its surface, creating a dreamlike spectacle. Beneath the Qilian Mountains, vast grasslands teem with cattle and sheep amid endless seas of flowers, while Menyuan's hundred-mile rapeseed flower fields are among China's most spectacular floral wonders. Hoh Xil is one of the last pristine lands on Earth, where Tibetan antelopes roam freely across the uninhabited wilderness. Tar Monastery's butter sculptures, murals, and embroidered thangkas are renowned worldwide as a sacred site of the Gelug school of Tibetan Buddhism. Qinghai is also a vital gateway to Tibet — the Qinghai-Tibet Railway departs from Xining, crosses the Qaidam Basin and Hoh Xil, and reaches Lhasa, earning the name "Sky Road." Here the skies are crystal blue, the air is pure and transparent, and the starry nights are dazzling — a perfect escape from urban noise to cleanse the soul.
Qinghai is the essence of northwest China travel — pristine and magnificent natural scenery at a lower altitude than Tibet and closer than Xinjiang, making it the ideal introduction to plateau travel. For a first visit, plan around 7 days on the Xining → Qinghai Lake → Chaka Salt Lake → Qilian Grand Loop. With more time, Hoh Xil and the Water Yardang are deeper experiences. June to August is the best travel season, with rapeseed flowers blooming and grasslands at their greenest in July. Xining sits at 2,261 meters — most people won't experience noticeable altitude sickness, making it an ideal starting point for plateau acclimatization. Note that UV radiation in Qinghai is extremely strong and day-night temperature swings are large, so sun protection and warm clothing are both essential.

Local Cuisine

Qinghai Niangpi (Cold Skin Noodles)
Qinghai's most iconic street food — cold noodle sheets made from wheat flour, dressed with chili oil, vinegar, garlic sauce, and mustard. Chewy, smooth, tangy, and spicy, it's the perfect refreshment on a hot summer day. You'll find niangpi stalls on nearly every alley in Xining — it's the locals' favorite everyday snack.

Hand-Grabbed Lamb
Qinghai's most traditional hospitality dish, made from free-range Tibetan sheep raised on the plateau, simply boiled in water with a touch of salt. The meat is tender and completely free of gamey flavor. Eaten by hand and dipped in a bit of pepper salt, you taste the lamb at its purest. Paired with a bowl of hot lamb broth, it's the warmest comfort food on the plateau.

Ga Mianpian (Torn Noodle Pieces)
A Qinghai household staple — small fingernail-sized pieces of dough torn by hand and boiled with lamb, potatoes, radish, and other ingredients. The noodle pieces are thin yet chewy, and the broth is rich and flavorful. Also available stir-fried or braised. A steaming bowl of ga mianpian is the ultimate stomach-warmer on the cold plateau.
📍 Noodle shops and Hui restaurants throughout Xining

Tianpei (Fermented Barley Dessert)
A Qinghai specialty dessert made from fermented highland barley or oats, with a sweet-sour, soft, and mildly alcoholic flavor. Tianpei stalls can be found on every street corner in Xining — especially refreshing when served chilled in summer. It's also a traditional food of the Tibetan and Tu peoples, embodying the wisdom of plateau living.
